Fusing elements of the Maghreb – cumin, chilli, garlic, couscous – with the influence of Italy, Tripoli provides the inspiration for Silvia Nacamulli’s demonstration.

Recipes include couscous served with spicy fish hraimi accompanied by tuershi (pumpkin dip), a spicy pepper and tomato nerduma and a rich, aromatic safra (semolina dessert with orange blossom water and honey).
